    If at this point, you haven’t heard or read about fonio, then it means you have not been following us. For quite some time now, we have been publishing some of the Continent and vegan food delicacies prepared with either our own home-processed Fonio grain or Fonio flour, both verified gluten-free by Eurofins. It’s never too late to learn about near things and in particular to get to know about the extraordinary health benefits of our Fonio products. For those of you who are still new to this rediscovered superfood, Fonio grain looks a bit like brown sugar, it’s the smallest grain ever cultivated in the world. Fonio is naturally gluten-free, has an earthy, nutty flavor, and a texture similar to couscous when cooked. Fonio is also rich in fiber, protein, iron, and calcium. This recipe is lip-smacking and I dare you to try it. These Fonio balls are super tender and served in an African-inspired peanut sauce. We will dish in the Ghanaian peanut sauce or soup, as we call it here. Ready? RECIPE For a more savory recipe, try making these Fonio balls (similar to the local Ghanaian rice balls), which feature an African peanut sauce using OTI Premium Gluten Free Fonio grain. The Fonio balls should feature oats, harissa paste, diced onions, garlic, tomato paste, and a number of seasonings such as cumin, paprika, coriander, cinnamon, cayenne pepper, fenugreek, and ground chili. METHOD We start by cooking the Fonio. Since it is a very small grain (a bit smaller than millet), it cooks very quickly. Just 7 minutes in boiling water and it’s ready! The mixture for the balls is easy to prepare. You process the precooked OTI Gluten-Free Fonio grain, oats, spices, and aromatics like garlic and onion in a food processor until everything is well combined and sticky enough to form balls. For the spices - Go with a mix of ground cumin, chili, paprika, coriander, fenugreek, and cinnamon. This mix is inspired by famous African spice blends. If you have other natural spices in your pantry, feel free to use them instead of the spices listed above. Once the balls are shaped, shallow-fry with coconut oil in a skillet until golden brown. What I like about these Fonio balls is how well they hold together. You don’t have to worry about them falling apart. Before we jump to the preparation of our peanut sauce or soup, let me inform you that with OTI Gluten-Free Fonio, you don’t need to wash it before using it. It’s so clean that you don’t only have to pour it in your pan and off you go. Now onto the sauce! Cook some onions, garlic, and ginger until fragrant, then add carrots and red bell peppers. The addition of carrots and peppers not only adds sweetness but also gives the dish more texture. I personally like to keep the carrots slightly crunchy. When the carrots are cooked, pour in the full-fat coconut milk, a generous amount of natural peanut butter, water to thin out, spices, and some coconut sugar to balance with the spices. Do not try to reduce the amount of peanut butter or use light coconut milk; it just won’t be as good. Okay, the sauce is rich but it’s really the star of the dish. Finally, you add the Fonio balls to the sauce, stir to coat and let simmer for a few more minutes to let the balls soak up the flavors of the sauce. These Fonio balls are delicious with a simple green salad or on top of rice for a filling and nutritious meal. I’m sure you will love this recipe. Well, I did. INGREDIENTS 1/ 2 cups of OTI Gluten-free White Fonio Grain 1 cups water To Taste salt 1 teaspoon avocado or Coconut oil METHOD In a pot large enough to allow for expansion, coat OTI Gluten-Free White Fonio Grain well with 1 tsp Avocado or coconut oil. Add 1 cup water, stir, and bring to a boil. Add salt to taste. Cover and lower to simmer for one minute. Keep covered, off heat, and let rest for 4 minutes. Fluff with a fork while still warm.   • HOW TO PREPARE MUSHROOM PILAF (ANGWAMO) FONIO

    Fonio is quite a fine grain, with very small individual pieces that are hard to distinguish raw. But when cooked it almost quadruples in size, which means more buck for your money. This recipe is a play or replica of the Ghanaian braised rice (angwamo or pilaf) using different flavors like Ghanaian aromatics like onion, garlic, and ginger. In our previous post, we learned how to prepare Jollof with Fonio, but today we are preparing angwamo/pilaf with Fonio. Let’s delve into the recipe. Ingredients One clove of garlic crushed/minced 1/4 cup chopped onions 1/3 cup dry mushrooms 1 tbsp of ginger minced 1/2 cup OTI gluten-free white fonio grain 1 cup of veggie broth/water 1 tsp OTI coconut oil 1/2 tsp each of coriander seeds finely grounded and black pepper 2 cardamom pods finely grounded ( grind the whole spices in a mortar with a pestle) 1/8 scotch bonnet pepper (completely optional) Salt to taste DIRECTION In a pot, sauté the onion, garlic, ginger, scotch bonnet pepper, spices, and mushrooms in the coconut oil. If the pot starts to get dry deglaze with a little amount of water till the onions become soft. You do not want it to be too saucy otherwise it will throw off the liquid ratio. So add the water a little at a time using only what you need. Once the onions are nice and soft and translucent, add the veggie broth. Cover the pot till the broth comes to a boil. Once it starts to boil, add the fonio and cover the pot. Lower the heat till low and let the fonio cook for 5 minutes. After the 5 minutes have passed, turn off the heat and keep the pot in place. Do not touch it and do not move it. Let the pot sit for ten minutes. After ten minutes, you can open the cover and fluff the fonio.   • OTI GLUTEN-FREE FONIO GRAIN WAAKYE

INGREDIENTS OTI Gluten-Free Fonio Pre-cooked red or White black-eyed beans Waakye Leaves(Hibiscus) for Color (optional) OTI Organic Coconut Oil 1 Chopped Onion ½ - 1 Chopped Green Pepper ( Capsicum) Crushed and Diced 1-2 Cloves Garlic Sea Salt Vegan Shitor Let’s make it!! Start with a small amount of coconut oil in a heated pan large enough to make the waakye. The coconut oil should be enough to saute onions at medium to high heat. Once the oil is heated add onions, green peppers, and garlic and let sizzle; sautee but do not let the mixture get brown. Once it is pre-cooked beans, stir and add some salt to taste. Drop a reasonable number of waakye leaves and leave them to boil for about 10 minutes. After that, pour your desired amount of OTI Fonio Gluten-free Fonio, stir and leave to boil for about 10minutes. I would suggest that you add the OTI Fonio bit by bit to see how it behaves in the mixture with the beans. If your pre-cooked beans have lots of water you might want to start with scooping some of the water out then adding it back in if necessary. Sprinkle some water after some minutes. Plate waakye with shitor and any other additions you may prefer like sauteed vegetables, stew, or avocado, and enjoy!

  • HOW TO PREPARE GHANAIAN VEGAN SHITO WITH OTI COCONUT OIL

    Shito (pronounced Shee-tor) is simply one of the best Ghanaian hot pepper sauces you can ever taste. You can eat shito with Fonio Pilaf, Fonio Jollof, or your favorite dishes. You probably don’t want to limit yourself with Ghanaian dishes but you can add shito to Chinese foods, Caribbean food, or any food you can think of. As usual, get yourself some chilled sobolo, and let’s dive into this recipe. INGREDIENTS AND MATERIALS 200g Onions, 100g Garlic and 150g Ginger Chilli pepper Salt to taste Natural Spices (Cloves, Curry Powder, rosemary, and anise seeds) OTI Organic Coconut Oil ½ cup of Tomato paste ½ cup of Shredded dried mushroom (Depends on how you want it) Blender, Medium-sized Glass jar, Ladle, Medium-sized cooking pot, and a teaspoon METHOD Heat the medium-sized cooking pot and pour in a reasonable volume of the OTI Organic Coconut Oil. After heating the OTI Coconut Oil, pour the ½ cup Tomato paste and cook for 5mins till it fries completely. Keep the pot at medium heat. Blend the 200g onions, 100g garlic, 150g ginger, and your preferred quantity of chili pepper, depending on how hot you want your vegan shito. Use a small quantity of water so that the shito can cook faster. Pour the blended mixture into the fried tomato paste in the pot and lower the heat to medium heat. Cook at medium heat for about 15 to 20mins, stirring intermittently so it doesn’t burn. After it is well cooked, add your natural spices (you can blend them if you want) and stir till mixed completely. Add your shredded dried mushroom and stir until it’s mixed. Cook at low heat for about 15minutes covered, stirring occasionally. After 15mins, take off the cover and let the shito cook for an extra 10mins without the lid covering it.. When you take the lid off, it reduces the shito and allows it to be drier and crispy. HOW TO STORE YOUR VEGAN SHITO Remove the cooking pot and allow it cool. Fill your jars with the cool Vegan Shito but not to the brim. Pour some extra OTI Organic Coconut Oil on the shito. This is done to preserve the sauce. Cover the jars and store your sumptuous shito in your fridge. Note: This vegan shito is not meant to look as black as the normal non-vegan shito. This shouldn't be overcooked else it might have a bitter taste. Well-cooked shito can last over 3 months when properly stored. You can use this shito to season your meals or serve as a condiment.
