Cinnamon is a highly delicious spice sourced from the bark of trees scientifically called Cinnamomum. It is prized for its strong smell and medicinal benefits.
The distinct smell and flavour of cinnamon are due to the oily part, which is very high in the compound cinnamaldehyde.
Deciding to incorporate cinnamon in any dish in the right proportion unlocks flavours you have never dreamt of.
I love a good meal with well-spiced chicken - except you're vegan or don't like chicken, you probably do too.
Now, although there are some basic ingredients and spices that are commonly used for preparing chicken, adding cinnamon powder takes it to a whole new level.
Whether at a family dinner or a large event, serving this cinnamon chicken recipe will leave everyone asking for “more chicken please”.
What you need:
· 2 pounds of cleaned chicken thighs and drumsticks
· 1 teaspoon powdered salt
· 1 1/2 teaspoons cinnamon
· 1 teaspoon black pepper
· 1 onion, sliced
· 3 cloves garlic, minced
· 1 teaspoon paprika
· 1 cup water or chicken stock
Cooking Process
In a bowl, mix the cinnamon, garlic, salt and pepper.
Rub the mixture on the chicken pieces and leave to sit for about 30 minutes at room temperature.
Heat oven to 400°F. Arrange the chicken pieces in an orderly fashion on a large roasting pan.
Sprinkle the paprika all over the chicken and the onion slices around the chicken. Allow the meat to cook for 35 minutes and then reduce the heat to 350°F.
Sprinkle a cup of water or chicken stock into the roasting pan and continue cooking for another 50 minutes. Serve with a dish of your choice and use the juices from the pan as a sauce.
